The Coburger Schmätzle are small, round honey cookies and an integral part of Franconian Christmas baking. The sweet pastry is considered a classic and is traditionally baked around the day of repentance and prayer. The reason for this is that the Schmätzle require a certain maturation time to develop their full aroma and taste particularly good during Advent.
