The Glückstädter Matjeswochen start today, Thursday, and in a company in Glückstadt, the matjes is still produced according to old tradition, completely without machines. It all started very small almost 30 years ago, meanwhile Henning Plotz sells his matjes all over Germany. Only young herrings that have not yet reproduced can become matjes here.
