They are also called tipsy or drunken maidens and are among the classic desserts of old cuisine. The egg white dumplings are quickly made, and the mulled wine sauce gives the dish a wintry touch. Where does the name come from? The dumplings "blush" when served with the mulled wine sauce. This is supposed to remind one of the cheeks of young girls when consuming alcohol.
