Why Potatoes Deserve a Place on Your Plate

Normal potatoes are often underestimated compared to sweet potatoes. However, experts say they are actually very nutrient-rich and support the immune system, energy supply, and overall health. Potatoes are rich in carbohydrates, but contain complex carbohydrates that release energy slowly, keeping you full longer and providing energy. Some varieties have a high glycemic index (GI) that can raise blood sugar levels. On the other hand, waxy varieties like red or fingerling potatoes have a lower GI value. Combining potatoes with protein, healthy fats, and vegetables can contribute to a balanced meal, slow down digestion, and prevent sharp blood sugar spikes. Potatoes provide vitamin C, phenols, and vitamin B6, which support tissue repair, the immune system, cardiovascular health, as well as protection against inflammation and chronic diseases. A medium-sized Russet potato contains around 900 milligrams of potassium – more than a banana – helping regulate nerve function, muscle function, and blood pressure. Eating the skin also provides additional fiber and antioxidants. Darker varieties like red or purple potatoes also contain anthocyanins, which have positive effects on heart and brain health.
