What you need: For the rice: - 175 g sushi rice - 250 ml water - 3 tbsp rice vinegar - 1 tsp salt - 1 tsp sugar For the filling: - 150 g raw salmon fillet - avocado (or whatever you like) - 2 pcs nori leaves - 1 tsp wasabi - 0.5 tsp ginger What else do we need: - Mat - chopsticks and here's how: - Wash the sushi rice. - Bring the rice to a boil in 250 ml of water and simmer for 2 minutes. - Turn off the heat and let the rice swell in the closed pot for 10 minutes. It is important not to open the pot, otherwise the water vapor will escape. - Remove the lid after 10 min and let the rice swell open for another 10 minutes. - For the marinade : In a small pot, heat 3 tablespoons of rice vinegar with a level teaspoon each of salt and sugar. - Then mix loosely (preferably with chopsticks) with the swollen rice. - The rice and the marinade should be at the same temperature. - In no case use a metal bowl, it could affect the taste! - Let the mixture stand for 10 minutes. - Rinse the salmon in cold water, pat dry and check that there are no bones left. - Cut the salmon into 1 cm wide strips. - Also cut the avocado into strips about 1 cm wide. - Place a nori sheet, smooth side down, on a bamboo mat. - Spread the rice on top. - Leave about an inch free on one long side. - Moisten this slightly. - Cover the opposite long side with salmon strips. - Carefully fold in the nori sheet using the mat, holding the salmon in place with your fingers. - Roll up completely by lifting the mat, keeping it pressed tightly. The first sushi roll is ready! Now divide into 6 pieces each with a very sharp knife. ------------------------------------------ MARCO POLO TV is the first journalistic German-language TV travel channel and comes from the publishing house MairDumont.
